Ingredients (Serves 4)

Pork

  • 1 pork tenderloin (1–1.25 lb / 500–600 g)

  • 8 slices bacon

  • 3 tbsp whole grain mustard

  • 1 tbsp Dijon mustard

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp fresh thyme, chopped

  • Salt and black pepper to taste

Pan Sauce

  • 1 tbsp butter

  • 1 shallot, finely minced

  • ½ cup chicken stock

  • ¼ cup heavy cream

  • 1 tsp Dijon mustard

Optional Garnish

  • Microgreens

  • Cranberry or blackberry compote

Instructions

Step 1: Prepare the Pork

  1. Preheat oven to 400°F (200°C).

  2. Butterfly the pork tenderloin lengthwise without cutting all the way through.

  3. Spread the whole grain mustard and Dijon mustard inside.

  4. Season with garlic powder, thyme, salt, and pepper.

  5. Fold the tenderloin closed.

Step 2: Wrap with Bacon

  1. Lay bacon strips side by side on a cutting board.

  2. Place the tenderloin on top.

  3. Wrap the bacon around the pork, securing with toothpicks if necessary.

Step 3: Sear

  1. Heat olive oil in an oven-safe skillet over medium-high heat.

  2. Sear the pork for 2–3 minutes on each side until the bacon is golden.

Step 4: Roast

  1. Transfer skillet to the oven.

  2. Roast for 18–22 minutes or until the internal temperature reaches 145°F (63°C).

  3. Let rest for 10 minutes before slicing.

Step 5: Make the Sauce

  1. Remove excess fat from the skillet.

  2. Add butter and shallot; cook for 1 minute.

  3. Stir in chicken stock and simmer for 3 minutes.

  4. Add cream and Dijon mustard.

  5. Simmer until slightly thickened.

Step 6: Serve

  1. Slice the pork into medallions.

  2. Spoon sauce onto serving plates.

  3. Arrange pork slices on top.

  4. Garnish with microgreens and berry compote if desired.
