Bacon-Wrapped Pork Tenderloin with Whole Grain Mustard Filling
Ingredients (Serves 4)
Pork

1 pork tenderloin (1–1.25 lb / 500–600 g)

8 slices bacon
-
3 tbsp whole grain mustard
-
1 tbsp Dijon mustard
-
1 tbsp olive oil
-
1 tsp garlic powder
-
1 tsp fresh thyme, chopped
-
Salt and black pepper to taste
Pan Sauce
-
1 tbsp butter
-
1 shallot, finely minced
-
½ cup chicken stock
-
¼ cup heavy cream
-
1 tsp Dijon mustard
Optional Garnish

Microgreens

Cranberry or blackberry compote
Instructions
Step 1: Prepare the Pork

Preheat oven to 400°F (200°C).

Butterfly the pork tenderloin lengthwise without cutting all the way through.

Spread the whole grain mustard and Dijon mustard inside.

Season with garlic powder, thyme, salt, and pepper.
-
Fold the tenderloin closed.
Step 2: Wrap with Bacon

Lay bacon strips side by side on a cutting board.

Place the tenderloin on top.

Wrap the bacon around the pork, securing with toothpicks if necessary.
Step 3: Sear

Heat olive oil in an oven-safe skillet over medium-high heat.

Sear the pork for 2–3 minutes on each side until the bacon is golden.
Step 4: Roast

Transfer skillet to the oven.

Roast for 18–22 minutes or until the internal temperature reaches 145°F (63°C).

Let rest for 10 minutes before slicing.
Step 5: Make the Sauce

Remove excess fat from the skillet.

Add butter and shallot; cook for 1 minute.

Stir in chicken stock and simmer for 3 minutes.

Add cream and Dijon mustard.

Simmer until slightly thickened.
Step 6: Serve

Slice the pork into medallions.
-
Spoon sauce onto serving plates.
-
Arrange pork slices on top.

Garnish with microgreens and berry compote if desired.
