Ingredients
For the Chocolate Cake

2 large eggs

ยผ cup (60ml) vegetable oil

1 tsp vanilla extract
For the Chocolate Ganache

1 cup (170g) dark chocolate, chopped

ยฝ cup (120ml) heavy cream

1 tbsp unsalted butter
For the Nut Crunch Base

ยฝ cup (60g) chopped almonds
-
ยผ cup (30g) hazelnuts, chopped

1 tbsp honey
Garnish

Fresh blueberries
-
Red currants or cranberries
-
Chopped toasted nuts

Mint leaves
Instructions
Step 1: Prepare the Cake

Preheat oven to 350ยฐF (175ยฐC).

Grease four 4-inch mini cake pans.

In a bowl, whisk flour, cocoa powder, baking powder, and salt.

In another bowl, beat eggs and sugar until light.

Add milk, oil, and vanilla.

Fold dry ingredients into wet ingredients.

Divide batter among pans.
Bake for 18โ22 minutes.
Allow cakes to cool completely.
Step 2: Make the Nut Crunch Layer

Toast almonds and hazelnuts in a dry skillet.

Mix with honey.

Press onto the bottoms of the cooled cakes.
Step 3: Prepare the Ganache
