Ingredients
For the Steaks

1 tbsp olive oil

For the Roasted Garlic & Tomatoes

8 garlic cloves, peeled
-
1 cup cherry tomatoes

1 tbsp olive oil

Salt and pepper to taste
For the Pan Sauce

2 tbsp unsalted butter
-
2 garlic cloves, minced
-
ยฝ cup beef broth
-
ยผ cup heavy cream
-
1 tsp Dijon mustard
-
1 tsp fresh thyme leaves
For Serving

Mashed potatoes

Fresh thyme sprigs
Instructions
Step 1: Roast the Vegetables

Preheat oven to 400ยฐF (200ยฐC).

Toss garlic cloves and cherry tomatoes with olive oil, salt, and pepper.

Step 2: Prepare the Steaks
