Ingredients (Serves 6)
Panna Cotta

2 cups (480 ml) heavy cream

1 cup (240 ml) whole milk

⅓ cup (70 g) granulated sugar

2 tbsp instant espresso powder

1 tsp vanilla extract
-
2¼ tsp (1 packet) unflavored gelatin

3 tbsp cold water
Chocolate Topping

50 g (2 oz) dark chocolate, finely shaved

1 tbsp cocoa powder, for dusting
Optional Garnish

Chocolate-covered espresso beans

Whipped cream
Instructions
Step 1: Bloom the Gelatin

Pour cold water into a small bowl.

Sprinkle gelatin over the water.

Let stand for 5 minutes.
Step 2: Prepare the Coffee Cream

In a saucepan, combine cream, milk, sugar, and espresso powder.

Heat over medium heat until steaming.

Stir until sugar and coffee are fully dissolved.

Remove from heat and add vanilla extract.
Step 3: Add Gelatin

Stir the bloomed gelatin into the hot mixture.

Whisk until completely dissolved.
Step 4: Strain and Pour

Strain through a fine-mesh sieve for a silky texture.

Divide among 6 ramekins or dessert molds.
Step 5: Chill

Refrigerate for at least 4 hours or overnight.

The panna cotta should be firm but slightly jiggly.
Step 6: Unmold and Decorate

Dip molds briefly in warm water.

Invert onto serving plates.

Dust with cocoa powder and top with chocolate shavings.
