Ingredients (Serves 6)

Panna Cotta

  • 2 cups (480 ml) heavy cream

  • 1 cup (240 ml) whole milk

  • ⅓ cup (70 g) granulated sugar

  • 2 tbsp instant espresso powder

  • 1 tsp vanilla extract

  • 2¼ tsp (1 packet) unflavored gelatin

  • 3 tbsp cold water

Chocolate Topping

  • 50 g (2 oz) dark chocolate, finely shaved

  • 1 tbsp cocoa powder, for dusting

  • Whipped cream

Instructions

Step 1: Bloom the Gelatin

  1. Pour cold water into a small bowl.

  2. Sprinkle gelatin over the water.

  3. Let stand for 5 minutes.

Step 2: Prepare the Coffee Cream

  1. In a saucepan, combine cream, milk, sugar, and espresso powder.

  2. Heat over medium heat until steaming.

  3. Stir until sugar and coffee are fully dissolved.

  4. Remove from heat and add vanilla extract.

Step 3: Add Gelatin

  1. Stir the bloomed gelatin into the hot mixture.

  2. Whisk until completely dissolved.

Step 4: Strain and Pour

  1. Strain through a fine-mesh sieve for a silky texture.

  2. Divide among 6 ramekins or dessert molds.

Step 5: Chill

  1. Refrigerate for at least 4 hours or overnight.

  2. The panna cotta should be firm but slightly jiggly.

Step 6: Unmold and Decorate

  1. Dip molds briefly in warm water.

  2. Invert onto serving plates.

  3. Dust with cocoa powder and top with chocolate shavings.
