Curry Puff Recipe

Wrapper Ingredients:
* 2 cups wheat flour
* 1/4 cup hot cooking oil
* 1/2 cup ice water
* 1/2 tsp salt
* 1 tsp sugar

Instructions:
1. Prep the pan:
- Heat oil in a pan over medium heat.
- Fry garlic and ginger paste until fragrant.
- Add curry powder mixture, cook on low heat for 10 minutes, stirring continuously.

2. Add potatoes, onion, and seasonings. Stir, add water, cover, and cook until potatoes are tender.

3. Finish with Beans:
- Add long beans, cook for 2 more minutes.
- Adjust seasonings as needed.
- Cool the filling completely before using.
(You can make this filling a day ahead and refrigerate it.)

4. In a bowl, combine flour, sugar, and salt.

5. Heat cooking oil until hot, pour into the flour mixture, and mix thoroughly.

6. Add ice-cold water to the mixture and knead to form a non-sticky dough.

7. Cover the dough and let it rest for 30-60 minutes.

8. Divide the dough into small balls (cover with plastic wrap to avoid dryness).

9. Roll out a piece of dough, add filling, fold over, seal, and twist the edges.

10. Deep fry in small batches until golden brown (about 3-4 minutes).

Filling Ingredients:
* 500g potato, peeled and finely diced
* 1 onion, finely chopped
* 100g long beans, chopped
* 1 tbsp minced garlic
* 1 tbsp ginger paste (optional)
* 4 tbsp curry powder mixed with 100ml water
* 1-2 tbsp chili powder
* 300ml water for cooking the potatoes
* 3-4 tbsp oil for cooking
