Camarones a la Diabla Recipe

Here is the recipe for delicious Camarones a la Diabla, a flavorful Mexican dish with a spicy kick.

Ingredients:

  • 500 g (about 1 lb) shrimp (peeled and deveined)

  • 4 dried chiles (you can use chile de árbol, guajillo, or chipotle, depending on your preferred spice level)

  • 3 garlic cloves

  • 1/2 onion

  • 2 ripe tomatoes

  • 1/4 cup chicken broth or water

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon soy sauce (optional)

  • 1 tablespoon lime juice

  • 1 teaspoon sugar (optional, to balance the heat)

  • Olive oil or vegetable oil

  • Salt and pepper to taste

  • Chopped fresh cilantro for garnish (optional)


Instructions:

1. Prepare the Diabla Sauce:

  • In a skillet, heat a bit of oil over medium heat. Add the dried chiles and toast them lightly for about 2 minutes, being careful not to burn them.

  • Add the tomatoes, onion, and garlic cloves. Cook for about 5 minutes, until the tomatoes are softened.

  • Remove from heat and transfer the ingredients to a blender. Add the chicken broth or water, Worcestershire sauce, soy sauce (if using), lime juice, and sugar (if you'd like to tone down the heat). Blend everything until smooth.

2. Cook the Shrimp:

  • In a large skillet, heat a bit of oil over medium-high heat.

  • Add the shrimp and cook for 2–3 minutes until they turn pink and are cooked through. Do not overcook to avoid a rubbery texture.

  • Remove the shrimp from the skillet and set aside.

3. Prepare the Final Sauce:

  • In the same skillet, pour in the sauce you just blended. Cook over medium heat for about 5 minutes, stirring constantly, until it thickens slightly.

  • If the sauce is too thick, you can add a bit more broth or water.

  • Add the shrimp back into the skillet and mix well with the sauce. Cook for another 2–3 minutes so the shrimp can absorb the flavors.

4. Serve:

  • Serve the Camarones a la Diabla hot, garnished with chopped fresh cilantro if desired.

  • You can accompany them with white rice, corn tortillas, or even French fries.
