🌽 Corn Avocado Salsa

Ingredients:

  • 2 cups cooked sweet yellow corn (fresh, canned, or thawed frozen)

  • 2 large avocados, diced

  • 1 cup tomato, diced

  • ½ cup red onion, diced

  • 1 jalapeño, diced (remove seeds for less heat)

  • 1 tbsp chopped cilantro

  • Juice of 1 lime

  • 1 tsp kosher salt

  • ½ tsp black pepper

Instructions:

  1. In a large bowl, combine the corn, tomato, red onion, jalapeño, and cilantro.

  2. Gently fold in the diced avocados.

  3. Drizzle with lime juice, sprinkle with salt and pepper.

  4. Toss gently to combine. Chill for 10–15 minutes before serving for best flavor.

  • 1 large mango, diced

  • ½ cup red onion, diced
