Teriyaki Shrimp & Pineapple Rice Stack


Ingredients (Serves 2)

For the Shrimp

  • 300 g large shrimp, peeled and deveined

  • 1 tablespoon cooking oil

  • Salt and black pepper, to taste

Teriyaki Sauce

  • 3 tablespoons soy sauce

  • 2 tablespoons honey or brown sugar

  • 1 tablespoon rice vinegar or lime juice

  • 1 teaspoon cornstarch + 2 tablespoons water

  • 1 clove garlic, minced

  • ½ teaspoon grated ginger (optional)


For the Pineapple Layer

  • 1 cup fresh pineapple rings or chunks

  • 1 tablespoon butter or oil

  • 1 teaspoon sugar (optional, for caramelizing)


For the Rice

  • 1½ cups cooked white rice (slightly warm)

  • 1 teaspoon sesame oil

  • ½ teaspoon salt


Garnish

  • Toasted sesame seeds

  • Chopped green onions or chives

1. Prepare the Rice

In a bowl, mix the warm rice with sesame oil and salt.
Press the rice firmly into a round mold or small bowl to help it hold its shape. Set aside.


2. Caramelize the Pineapple

Heat butter or oil in a pan over medium heat.
Add pineapple and sprinkle lightly with sugar if using.
Cook 2–3 minutes per side until golden and caramelized.
Arrange pineapple in a ring shape on top of the rice layer.


3. Cook the Shrimp

Season shrimp lightly with salt and pepper.
Heat oil in a pan over medium-high heat.
Add shrimp and cook 1–2 minutes per side until pink and slightly golden. Remove and set aside.


4. Make the Teriyaki Sauce

In the same pan, add soy sauce, honey, vinegar, garlic, and ginger.
Bring to a gentle simmer.
Stir in cornstarch slurry and cook until the sauce thickens and becomes glossy.

Return shrimp to the pan and toss until fully coated in the sauce.


5. Assemble the Stack

Place the rice base on a serving plate.
Top with the caramelized pineapple layer.
Arrange the glazed shrimp on top.

Spoon extra teriyaki sauce around the plate.


6. Garnish & Serve

Sprinkle with sesame seeds and chopped green onions.
Serve immediately.


Serving Notes

  • Best enjoyed warm.

  • Can substitute shrimp with chicken or tofu.

  • Add chili flakes or chili oil for a spicy kick.
