Stir-Fried Pork with Green Chilies (Asian-Style)


Ingredients (Serves 2–3)

  • 400 g pork (pork loin or pork shoulder), thinly sliced

  • 250–300 g long green chilies or green peppers, sliced lengthwise

  • 2 cloves garlic, thinly sliced

  • 3–4 slices fresh ginger

  • 1–2 red chilies, sliced (optional, for heat)

  • 2 tablespoons cooking oil

Marinade for the Pork

  • 1 tablespoon soy sauce

  • 1 teaspoon cornstarch

  • ½ teaspoon sugar

  • ½ teaspoon black pepper

Sauce

  • 1½ tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 2–3 tablespoons water or light stock

  • ½ teaspoon sesame oil (optional)


Instructions

  1. Marinate the Pork
    Place the sliced pork in a bowl.
    Add soy sauce, cornstarch, sugar, and black pepper.
    Mix well and let marinate for 10–15 minutes.

  2. Prepare the Vegetables
    Wash and slice the green chilies lengthwise, removing seeds if a milder taste is preferred.
    Slice garlic, ginger, and red chilies.

  3. Cook the Pork
    Heat oil in a wok or large pan over medium-high heat.
    Add the pork and stir-fry quickly until lightly browned and just cooked through.
    Remove pork from the pan and set aside.

  4. Stir-Fry Aromatics
    In the same pan, add garlic, ginger, and red chilies.
    Stir-fry for 20–30 seconds until fragrant.

  5. Cook the Green Chilies
    Add the green chilies to the pan and stir-fry for 2–3 minutes until tender but still crisp.

  6. Combine Everything
    Return the pork to the pan.
    Add soy sauce, oyster sauce, water or stock, and sesame oil if using.
    Toss everything together and cook for another 1–2 minutes until evenly coated and glossy.

  7. Finish & Serve
    Taste and adjust seasoning if needed.
    Remove from heat and serve hot.


Serving Notes

  • Best served with steamed white rice.

  • Can substitute pork with chicken or beef.

  • Adjust chili amount to control spiciness.
