Honey-Glazed Chicken with Avocado Rice & Lime Sauce
Ingredients (Serves 2)
For the Chicken

2 boneless, skinless chicken breasts

Salt and black pepper, to taste

1 tablespoon olive oil
Honey Glaze
-
2 tablespoons honey
-
1 tablespoon soy sauce
-
1 tablespoon fresh lime juice
-
1 clove garlic, minced
-
½ teaspoon paprika or chili flakes (optional)
For the Rice
-
1 cup cooked white rice (preferably warm)
-
1 tablespoon olive oil or butter
-
1 tablespoon chopped fresh herbs (parsley or cilantro)
-
Salt, to taste
For Serving
-
1 ripe avocado, sliced
-
Fresh chopped parsley or cilantro (for garnish)
-
Lime wedges
-
Extra pan sauce from the chicken
Instructions

1. Prepare the Chicken
Season the chicken breasts evenly with salt and black pepper.
Heat olive oil in a skillet over medium heat.
Add the chicken and cook for 5–6 minutes per side, until golden brown and fully cooked through.
Remove from the pan and let rest briefly, then slice into thick pieces.
2. Make the Honey Glaze
In the same pan (do not clean it), lower the heat to medium-low.
Add honey, soy sauce, lime juice, garlic, and paprika or chili flakes.
Stir and simmer for 1–2 minutes until slightly thickened and glossy.
Return the sliced chicken to the pan and spoon the sauce over the chicken until well coated.
3. Prepare the Rice
In a bowl, mix the warm rice with olive oil or butter, chopped herbs, and a pinch of salt.
Fluff gently.
4. Assemble the Dish
Place a mound of herb rice in the center of each plate.
Top with sliced avocado.
Arrange the glazed chicken on top.
Spoon extra honey-lime sauce around the plate.
Garnish with fresh herbs and serve with lime wedges.
