🧺 Ingredients

For the ham

  • 1 fully cooked ham (about 2–2.5 kg / 4–5 lb), boneless or bone-in

  • 1 can pineapple slices (about 400 g / 14 oz), drained (reserve juice)

For the glaze

  • 1 cup brown sugar

  • ½ cup pineapple juice (from the can)

  • ¼ cup honey or maple syrup

  • ¼ cup ketchup

  • 2 tablespoons soy sauce

  • 1 tablespoon Dijon mustard

  • 1 teaspoon garlic powder

  • ½ teaspoon ground black pepper

  • ¼ teaspoon ground cloves (optional, but very traditional)

1. Prepare the ham

  1. Preheat oven to 170°C / 325°F.

  2. Place the ham in a large roasting pan, flat side down.

  3. Using a sharp knife, score the surface of the ham in a diamond pattern, about 1–1.5 cm deep.

    • This helps the glaze soak in and caramelize beautifully.


2. Make the glaze

  1. In a saucepan over medium heat, combine:

    • Brown sugar

    • Pineapple juice

    • Honey (or maple syrup)

    • Ketchup

    • Soy sauce

    • Dijon mustard

    • Garlic powder

    • Black pepper

    • Ground cloves

  2. Stir well and bring to a gentle simmer.

  3. Cook for 5–7 minutes, stirring occasionally, until the glaze thickens slightly.

  4. Remove from heat.


3. Assemble

  1. Arrange pineapple slices neatly around and on top of the ham, like in the image.

  2. Spoon or brush half of the glaze generously over the ham and pineapple.


4. Bake

  1. Cover the ham loosely with aluminum foil.

  2. Bake for 60 minutes, basting every 20 minutes with pan juices.


5. Caramelize

  1. Remove foil.

  2. Brush the remaining glaze over the ham.

  3. Increase oven temperature to 220°C / 425°F.

  4. Bake uncovered for 15–20 minutes, until:

    • The glaze is sticky and glossy

    • Pineapple slices are lightly caramelized

(Watch closely to avoid burning.)


🍽️ Serving

  • Let the ham rest for 10 minutes before slicing.

  • Serve with the roasted pineapple and extra glaze from the pan.

  • Perfect with mashed potatoes, roasted vegetables, or rice.
