Stir-Fried Chicken with Ginger & Scallions
Ingredients (Serves 2–3)

700 g chicken (bone-in pieces or boneless thigh, chopped into bite-size pieces)

2 tablespoons cooking oil
-
3 slices fresh ginger
-
3 cloves garlic, lightly crushed
-
2 small shallots or ½ onion, sliced
-
2–3 stalks scallions (green onions), cut into 4–5 cm lengths
Seasoning
-
1½ tablespoons soy sauce
-
1 tablespoon oyster sauce
-
1 teaspoon fish sauce
-
½ teaspoon sugar
-
½ teaspoon black pepper
-
½ teaspoon sesame oil (optional)
-
2–3 tablespoons water or chicken stock
Instructions.

Prepare the Chicken
Rinse the chicken and pat dry thoroughly.
Season lightly with a pinch of salt and black pepper. -
Sear the Chicken
Heat oil in a pan or wok over medium-high heat.
Add chicken pieces and sear until golden brown on all sides. This helps render fat and deepen flavor. -
Aromatics
Push the chicken to the side of the pan.
Add ginger, garlic, and shallots. Stir-fry briefly until fragrant. -
Season & Simmer
Add soy sauce, oyster sauce, fish sauce, sugar, and water or stock.
Stir well to coat the chicken.
Cover and simmer on medium-low heat for 12–15 minutes until the chicken is cooked through and tender. -
Finish with Scallions
Add scallions and toss gently.
Cook uncovered for another 1–2 minutes until scallions soften but stay bright green.
Drizzle with sesame oil if using. -
Serve
Remove from heat and serve hot.
