Stir-Fried Chicken with Ginger & Scallions


Ingredients (Serves 2–3)

  • 700 g chicken (bone-in pieces or boneless thigh, chopped into bite-size pieces)

  • 2 tablespoons cooking oil

  • 3 slices fresh ginger

  • 3 cloves garlic, lightly crushed

  • 2 small shallots or ½ onion, sliced

  • 2–3 stalks scallions (green onions), cut into 4–5 cm lengths

Seasoning

  • 1½ tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon fish sauce

  • ½ teaspoon sugar

  • ½ teaspoon black pepper

  • ½ teaspoon sesame oil (optional)

  • 2–3 tablespoons water or chicken stock


Instructions.

  1. Prepare the Chicken
    Rinse the chicken and pat dry thoroughly.
    Season lightly with a pinch of salt and black pepper.

  2. Sear the Chicken
    Heat oil in a pan or wok over medium-high heat.
    Add chicken pieces and sear until golden brown on all sides. This helps render fat and deepen flavor.

  3. Aromatics
    Push the chicken to the side of the pan.
    Add ginger, garlic, and shallots. Stir-fry briefly until fragrant.

  4. Season & Simmer
    Add soy sauce, oyster sauce, fish sauce, sugar, and water or stock.
    Stir well to coat the chicken.
    Cover and simmer on medium-low heat for 12–15 minutes until the chicken is cooked through and tender.

  5. Finish with Scallions
    Add scallions and toss gently.
    Cook uncovered for another 1–2 minutes until scallions soften but stay bright green.
    Drizzle with sesame oil if using.

  6. Serve
    Remove from heat and serve hot.


Serving Notes

  • Best served with steamed rice.

  • Works great as a comforting home-style dish.

  • Can add chili slices for heat or mushrooms for extra texture.
