Braised Pork Ribs with Pineapple


Ingredients (Serves 2–3)

  • 600 g pork ribs, chopped into bite-size pieces

  • 1½ cups fresh pineapple, cut into chunks

  • 2 tablespoons cooking oil

  • 3 cloves garlic, minced

  • 1 small shallot or onion, finely chopped

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon fish sauce

  • 1 tablespoon brown sugar (or palm sugar)

  • ½ teaspoon black pepper

  • ½ teaspoon paprika or chili powder (optional)

  • ½ cup water or coconut water

  • Chopped green onions, for garnish


Instructions

  1. Prepare the Pork Ribs
    Rinse the pork ribs and blanch them briefly in boiling water for 3–5 minutes to remove impurities.
    Drain well and set aside.

  2. Sear the Ribs
    Heat cooking oil in a deep pan or skillet over medium heat.
    Add the pork ribs and sear until lightly browned on all sides. Remove and set aside.

  3. Make the Sauce Base
    In the same pan, add garlic and shallot.
    Sauté until fragrant and lightly golden.

  4. Braised the Ribs
    Return the ribs to the pan.
    Add soy sauce, oyster sauce, fish sauce, sugar, black pepper, and paprika.
    Stir well to coat the ribs evenly.

  5. Simmer
    Pour in the water or coconut water.
    Cover and simmer on low heat for 25–30 minutes, stirring occasionally, until the ribs are tender and the sauce thickens.

  6. Add Pineapple
    Add the pineapple chunks and gently mix.
    Continue cooking for another 5–7 minutes until the pineapple is softened and coated in the glossy sauce.

  7. Finish & Serve
    Taste and adjust seasoning if needed.
    Garnish with chopped green onions and serve hot.
