
Garlic Parmesan Chicken Meatloaf

This Garlic Parmesan Chicken Meatloaf is juicy, cheesy, and packed with savory Italian flavors. Made with ground chicken, Parmesan, and
melty mozzarella, it’s a lighter twist on classic meatloaf - perfect for an easy family dinner.
Ingredients

1.5 lbs ground chicken

½ cup breadcrumbs

½ cup grated Parmesan cheese

½ cup shredded mozzarella cheese (plus extra for topping)

3 cloves garlic, minced
-
1 large egg
-
¼ cup milk
-
1 tablespoon fresh parsley, chopped

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions
1. Preheat the Oven

Preheat oven to 375°F (190°C).

Lightly grease a loaf pan or line a baking sheet with parchment paper.
2. Make the Meatloaf Mixture

In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper.

Mix gently until just combined. Do not overmix to keep the meatloaf tender.
3. Shape the Meatloaf

Transfer the mixture into the prepared loaf pan or shape it into a loaf on the baking sheet.

Sprinkle extra mozzarella cheese over the top.
4. Bake

Bake uncovered for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).

For a golden cheesy top, broil for 2–3 minutes at the end if desired.
5. Rest and Serve

Let the meatloaf rest for 5–10 minutes before slicing.
