
Spicy Garlic Stir-Fried Squid

Ingredients

500 g fresh squid (cleaned, cut into rings & pieces)

4 cloves garlic, minced
-
1 tbsp ginger, minced
-
2 red chilies, sliced
-
1 small onion, sliced
-
1 cup fresh spinach or basil leaves
-
1 tomato, chopped
-
2 tbsp vegetable oil
Sauce
-
1 tbsp oyster sauce
-
1 tbsp soy sauce
-
1 tsp fish sauce
-
1 tsp sugar
-
½ tsp black pepper
-
1 tbsp chili paste (optional for extra heat)

2 tbsp water
Instructions

1. Prepare the Squid

Wash squid thoroughly.

Cut bodies into rings and tentacles into bite-size pieces.

Pat dry to avoid excess water when cooking.
2. Make the Sauce
In a small bowl, mix:

Oyster sauce
-
Soy sauce
-
Fish sauce
-
Sugar
-
Black pepper
-
Chili paste
-
Water
Set aside.
3. Stir-Fry Aromatics

Heat oil in a wok or pan over high heat.

Add garlic, ginger, onion, and chilies.

Stir-fry for 30–40 seconds until fragrant.
4. Cook the Squid
-
Add squid and cook quickly for 2–3 minutes.

Do not overcook or it will become rubbery.
5. Add Vegetables & Sauce
-
Add chopped tomato and spinach/basil.
-
Pour in the sauce and toss everything together.

Stir-fry another 1–2 minutes until coated and glossy.
6. Serve
Serve hot with steamed rice.
Tips

Cook squid quickly over high heat for tenderness.

Add bell peppers or spring onions for extra color.
-
Squeeze lime juice before serving for freshness.
