Pork Rib Vegetable Soup

Servings

3–4 servings


Ingredients

  • 500 g pork ribs, cut into pieces

  • 1 corn on the cob, cut into chunks

  • 2 potatoes, peeled and cut into chunks

  • 1 carrot, cut into chunks

  • 4–5 dried shiitake mushrooms (or fresh)

  • 1 small tomato, cut into wedges

  • 2 slices ginger

  • 2 green onions, chopped

  • 1.5 liters water

Seasoning

  • 1 tbsp fish sauce or soy sauce

  • 1 tsp salt (adjust to taste)

  • ½ tsp white pepper


Instructions

1. Blanch the Pork Ribs

  • Bring a pot of water to boil.

  • Add pork ribs and boil 3–5 minutes to remove impurities.

  • Drain and rinse clean.


2. Simmer the Broth

  • Add ribs to a clean pot with 1.5 liters water.

  • Add ginger and mushrooms.

  • Bring to a boil, then reduce heat and simmer 30 minutes.


3. Add Vegetables

  • Add corn, potatoes, and carrots.

  • Continue simmering 20–25 minutes until tender.


4. Finish the Soup

  • Add tomato wedges.

  • Season with fish sauce/soy sauce, salt, and white pepper.

  • Simmer another 5 minutes.


5. Serve

  • Sprinkle chopped green onions on top.

  • Serve hot.


Tips

  • Skimming foam during simmering makes the broth clearer.

  • For sweeter broth, add a few dried dates or a piece of onion.
