Ingredients

For the Chicken

  • 2 lbs (900 g) boneless skinless chicken breast or thighs, cut into 1½-inch cubes

  • 1 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

For the Marinade

  • ⅓ cup soy sauce

  • ¼ cup pineapple juice

  • 3 tbsp honey

  • 2 tbsp brown sugar

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

For the Skewers

  • 2 cups fresh pineapple chunks

  • 1 red bell pepper, cut into large squares

  • 1 green bell pepper, cut into large squares

  • 1 red onion, cut into chunks

Garnish

  • 1 tbsp chopped parsley

  • Sesame seeds (optional)

Instructions

Step 1 – Marinate the Chicken

  1. In a bowl whisk together:

    • Soy sauce

    • Pineapple juice

    • Honey

    • Brown sugar

    • Garlic

    • Ginger

    • Rice vinegar

    • Sesame oil

  2. Add chicken pieces and toss well.

  3. Cover and refrigerate for at least 1 hour, preferably 4 hours.

Step 2 – Assemble the Skewers

Thread onto skewers in this order:

  • Chicken

  • Pineapple

  • Red bell pepper

  • Green bell pepper

  • Red onion

Repeat until skewers are full.

Step 3 – Grill

  1. Preheat grill to medium-high heat (400°F / 200°C).

  2. Lightly oil grill grates.

  3. Grill skewers for 12–15 minutes.

  4. Turn every 3–4 minutes for even cooking.

  5. Brush with remaining marinade during the final minutes.

  6. Cook until chicken reaches 165°F (74°C).

Step 4 – Finish

  1. Transfer skewers to a serving platter.

  2. Sprinkle with parsley and sesame seeds.

  3. Serve immediately.

Oven Method

  1. Preheat oven to 425°F (220°C).

  2. Arrange skewers on a baking sheet.

  3. Bake for 18–20 minutes.

  4. Broil for 2–3 minutes at the end for caramelization.
