
Greek Meatball Rice Bowl with Tzatziki

Ingredients
Meatballs

400 g ground beef or lamb (or mix)

1/4 cup breadcrumbs

1 egg
-
2 cloves garlic, minced

2 tbsp onion, finely grated

2 tbsp parsley, chopped

1 tsp dried oregano
-
1/2 tsp paprika
-
Salt and black pepper to taste

1 tbsp olive oil (for cooking)
Rice & Veggies

1 cup cooked white rice
-
1 cup cucumber, sliced
-
1 cup cherry tomatoes, halved
-
1/4 red onion, thinly sliced
-
Fresh parsley for garnish
Tzatziki Sauce
-
1 cup Greek yogurt
-
1/2 cucumber, grated and squeezed dry
-
1 tbsp lemon juice
-
1 tbsp olive oil
-
1 clove garlic, minced
-
1 tbsp fresh dill or parsley
-
Salt and pepper to taste
Instructions

1. Make the tzatziki

Combine yogurt, grated cucumber, garlic, lemon juice, olive oil, and dill.

Season with salt and pepper.

Refrigerate until ready to use.
2. Prepare the meatballs

In a bowl, mix ground meat, breadcrumbs, egg, garlic, onion, parsley, oregano, paprika, salt, and pepper.

Form into small meatballs (about 2–3 cm).
3. Cook the meatballs

Heat olive oil in a skillet over medium heat.

Cook meatballs for 8–10 minutes, turning until browned and cooked through.
4. Assemble the bowl

Add cooked rice to bowls.

Arrange cucumber, tomatoes, and red onion around the rice.

Add meatballs on top.

Spoon tzatziki generously over the meatballs.

Garnish with fresh parsley.
Serving Suggestions
Serve warm with pita bread or a squeeze of fresh lemon for extra freshness.
