
Crispy Cheesy Corn Balls

Ingredients

2 cups sweet corn kernels (fresh or frozen)

1/2 cup mozzarella cheese, cubed or shredded

1/4 cup grated Parmesan cheese
-
1/2 cup breadcrumbs
-
1/4 cup all-purpose flour
-
1 egg
-
2 tbsp chopped cilantro
-
1 tsp garlic powder
-
1/2 tsp paprika
-
Salt and black pepper to taste

Oil for deep frying

Lime wedges (for serving)
Instructions

1. Prepare the mixture

Pat corn dry if using frozen corn.

In a bowl combine corn, mozzarella, Parmesan, breadcrumbs, flour, egg, cilantro, garlic powder, paprika, salt and pepper.

Mix until the mixture holds together.
2. Shape the balls

Scoop 1 tbsp of mixture.

Roll into small balls (about walnut size).

Chill in refrigerator 15–20 minutes to firm up.
3. Fry
-
Heat oil to 175°C / 350°F.

Fry balls in batches for 3–4 minutes until golden brown and crispy.

Drain on paper towels.
4. Serve
Serve hot with lime wedges and your favorite dipping sauce (garlic mayo, chili sauce, or sour cream).
Tips
-
Add chopped jalapeño for a spicy version.
-
Air fryer option: cook at 200°C / 400°F for 10–12 minutes, turning halfway.
