Beef with Baby Bok Choy Stir-Fry

Ingredients

Beef & Marinade

  • 400 g (14 oz) beef sirloin or tenderloin, cut into bite-size cubes

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp cornstarch

  • 1 tsp sugar

  • 1 tsp sesame oil

  • ½ tsp black pepper

Vegetables

  • 300 g baby bok choy, halved

  • 3 cloves garlic, minced

  • 1 small onion, diced (optional)

Sauce

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp hoisin sauce

  • 1 tsp sugar

  • ½ cup beef broth or water

  • 1 tsp cornstarch + 1 tbsp water (slurry)

For Cooking

  • 2 tbsp vegetable oil


Instructions

Step 1 – Marinate the Beef

In a bowl, mix beef with:

  • Soy sauce

  • Oyster sauce

  • Cornstarch

  • Sugar

  • Sesame oil

  • Black pepper

Marinate for 15–20 minutes.


Step 2 – Blanch the Bok Choy

  1. Bring water to a boil.

  2. Add bok choy and cook 1 minute until bright green.

  3. Remove and drain. Set aside.


Step 3 – Sear the Beef

  1. Heat 1 tbsp oil in a wok over high heat.

  2. Add beef and sear 2–3 minutes until browned.

  3. Remove from pan and set aside.


Step 4 – Stir-Fry Aromatics

  1. Add remaining oil.

  2. Stir-fry garlic and onion until fragrant (30 seconds).


Step 5 – Make the Sauce

Add to the pan:

  • Soy sauce

  • Oyster sauce

  • Hoisin sauce

  • Sugar

  • Beef broth

Bring to a simmer.


Step 6 – Combine Everything

  1. Return beef to the wok.

  2. Add cornstarch slurry and cook until sauce thickens.

  3. Add bok choy and toss gently for 1 minute.


Step 7 – Serve

Serve hot over steamed rice.


Tips

  • Cook beef quickly on high heat to keep it tender.

  • Do not overcook bok choy to keep its bright color and crunch.
