🥦 Broccoli, Potato & Cheese Patties

 

Ingredients:

  • 1 medium broccoli (cooked and chopped)

  • 2 medium potatoes (boiled and mashed)

  • 1 cup shredded cheese (mozzarella or cheddar)

  • 1 egg

  • 1/4 cup breadcrumbs or ground oats (optional, for added texture)

  • Salt and pepper to taste

  • Oil for frying


Instructions:

  1. Cook the vegetables:
    Boil the broccoli for 5–7 minutes and the potatoes until tender. Once cooked, chop the broccoli and mash the potatoes.

  2. Mix ingredients:
    In a large bowl, combine the mashed potatoes, chopped broccoli, shredded cheese, egg, salt, pepper, and breadcrumbs or oats (if using). Mix well until a uniform dough forms.

  3. Form the patties:
    Shape the mixture into small balls and flatten them slightly to form patties.

  4. Cook:
    Heat a bit of oil in a skillet over medium heat. Fry the patties for about 2–3 minutes on each side, or until golden brown.
    Alternatively, bake them in the oven at 200°C (390°F) for 20–25 minutes if you prefer an oil-free version.


Serving suggestions:
Serve with sour cream, guacamole, or a red or green salsa. Perfect as a side dish, snack, or light lunch! 🌱✨
