Ingredients

For the Skewers:

  • 1.5 lbs protein (chicken thighs, beef sirloin, shrimp, or tofu)

  • 1 bell pepper, cut into chunks

  • 1 red onion, cut into wedges

  • 1 zucchini, sliced

  • 8-10 wooden/metal skewers

For the BBQ Marinade:

  • ½ cup BBQ sauce (homemade or store-bought)

  • 2 tbsp soy sauce

  • 2 tbsp honey (or maple syrup)

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • 1 tbsp olive oil

  • ½ tsp black pepper

Optional Extras:

  • Pineapple chunks

  • Cherry tomatoes

  • Mushrooms

  •  


Step-by-Step Instructions

1. Soak Skewers (If Using Wooden)

  • Soak wooden skewers in water 30 minutes to prevent burning.

2. Prep & Marinate

  • Cut protein into 1.5-inch chunks.

  • Whisk together BBQ sauce, soy sauce, honey, garlic, paprika, olive oil, and pepper.

  • Toss protein in half the marinade; reserve the rest for basting.

  • Marinate 30 mins – 2 hours (or overnight for deeper flavor).

3. Assemble Skewers

  • Thread protein and veggies onto skewers, alternating colors.

4. Grill or Bake

  • Grill Method: Cook over medium-high heat for 10-12 minutes, turning and basting often.

  • Oven Method: Bake at 400°F (200°C) for 15-20 minutes, broiling at the end for char.

5. Serve & Enjoy!

  • Garnish with sesame seeds or cilantro. Serve with extra BBQ sauce.
