๐Ÿค๐ŸŒถ๏ธ CREAMY CHIPOTLE SHRIMP SPAGHETTI

A luscious fusion of spicy chipotle, juicy shrimp, and velvety cream — this recipe turns ordinary pasta into a restaurant-worthy dish.

๐Ÿ›’ Ingredients

Main:

  • 2 lbs (approx. 1 kg) of shrimp, peeled and deveined

  • 1 lb (450 g) spaghetti pasta

  • 2 cups Mexican crema (or sour cream)

  • 8 oz (225 g) cream cheese

  • 1/2 cup milk

  • 4 tablespoons butter (divided)

  • 1 chunk of white onion

  • 2 cloves of garlic (1 for sautéing, 1 for the sauce)

  • Chipotle peppers in adobo sauce (to taste – start with 1–2 if unsure)

  • 1–2 teaspoons chicken bouillon powder (or seasoning of your choice)

  • Salt and freshly ground black pepper to taste

  • Shredded melting cheese (such as mozzarella, Monterey Jack, or Oaxaca) – amount to taste

  • Chopped parsley or green onions for garnish (optional)

๐Ÿ”ฅ Step-by-Step Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
Drain and set aside. Drizzle with a bit of olive oil to prevent sticking if you’re not using it immediately.

2. Sauté the Shrimp

In a large skillet over medium-high heat, melt 2 tablespoons of butter.
Add 1 minced garlic clove and sauté for about 30 seconds until fragrant.
Add the shrimp, season with salt and pepper, and cook for 2–3 minutes per side or until they turn pink and slightly curled.
Transfer the cooked shrimp to a plate and set aside.

3. Prepare the Chipotle Cream Sauce

In a blender, combine the following:

  • 2 cups crema

  • 8 oz cream cheese

  • 1/2 cup milk

  • 1 garlic clove

  • Chunk of onion

  • 1–2 chipotle peppers in adobo (add more for a stronger kick)

  • Seasoning powder, salt, and pepper to taste

Blend until smooth and creamy. Taste and adjust spice or salt if needed.

4. Combine Everything

In the same skillet (or a deep pan), melt the remaining 2 tablespoons of butter over medium heat.
Add the cooked spaghetti and shrimp back into the pan.
Pour the chipotle sauce over and gently toss to combine everything evenly. Let the sauce warm up for 2–3 minutes, allowing the flavors to meld.

5. Add Cheese & Finish

Sprinkle your shredded melting cheese on top, cover the pan, and let it cook for another 2–3 minutes, just until the cheese melts and creates a gooey, cheesy finish.
(Optional: Stir gently to distribute the melted cheese into the sauce for a creamier texture.)

๐ŸŒฟ Garnish & Serve

Turn off the heat. Garnish your pasta with chopped parsley, cilantro, or green onions for a fresh pop of color and flavor.
Serve immediately while hot — and watch everyone go for seconds! ๐Ÿ˜‹

๐Ÿ’ก Pro Tips & Variations

  • No shrimp? Swap for chicken strips, grilled veggies, or mushrooms.

  • More smoky depth? Add a splash of chipotle sauce or smoked paprika to the blender.
