Amazing Forgotten Chicken

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 cup (190g) uncooked long-grain white rice

  • 1 (10.5 oz) can cream of chicken soup (or mushroom for variation)

  • 1 (10.5 oz) can water (use the soup can to measure)

  • 1 (1 oz) packet dry onion soup mix (or ranch seasoning for a twist!)

  • ½ cup (120ml) milk (or broth for extra flavor)

  • 1 tsp garlic powder

  • ½ tsp paprika (for color)

  • Salt & pepper to taste

Optional Add-Ins:

  • 1 cup frozen peas & carrots (for veggies!)

  • Shredded cheese (for topping

1. Prep & Preheat

  • Preheat oven to 350°F (175°C).

2. Layer the Ingredients

  1. In a 9x13-inch baking dish, spread uncooked rice evenly.

  2. Place chicken breasts on top.

  3. In a bowl, whisk soup, water, milk, onion soup mix, garlic powder, and paprika, then pour over chicken.

  4. Sprinkle with pepper (salt is in the soup mix, so taste first!).

3. Bake & Forget!

  • Cover tightly with foil and bake for 1 hour.

  • Uncover, bake 15-20 mins more until chicken is golden and rice is tender.
