🥔 Roasted Potatoes (Side Dish)

Ingredients:

  • 2 cups potatoes, diced into cubes

  • 1–2 tablespoons olive oil

  • Salt and pepper to taste

  • 1 teaspoon dried herbs (thyme or rosemary)

👩‍🍳 Instructions

1️⃣ Prepare the Ribs

  1. Preheat oven to 325°F (165°C).

  2. Remove the thin membrane from the back of the ribs.

  3. Pat ribs dry with paper towels.

  4. Mix salt, pepper, paprika, garlic powder, onion powder, and oregano.

  5. Rub olive oil over the ribs, then coat evenly with the spice mixture.

2️⃣ Slow Bake (Tenderizing)

  1. Wrap ribs tightly in aluminum foil.

  2. Place on a baking tray.

  3. Bake for 2–2.5 hours until meat is tender and almost falling off the bone.

3️⃣ Make the BBQ Glaze

  1. In a saucepan over medium heat, sauté minced garlic for 30 seconds.

  2. Add BBQ sauce, honey, brown sugar, soy sauce, and vinegar.

  3. Simmer for 5–7 minutes until slightly thickened and glossy.

4️⃣ Glaze & Caramelize

  1. Remove ribs from foil and place on a baking tray.

  2. Brush generously with BBQ glaze.

  3. Increase oven temperature to 400°F (200°C).

  4. Bake uncovered for 10–15 minutes.

  5. For extra caramelization, broil for 2–3 minutes until sticky and slightly charred.

5️⃣ Roast the Potatoes

  1. Toss diced potatoes with olive oil, salt, pepper, and herbs.

  2. Spread on a baking tray.

  3. Roast at 400°F (200°C) for 25–30 minutes until golden and crispy.

🍽️ Serving

  • Sprinkle ribs with chopped parsley.

  • Serve hot with roasted potatoes and fresh salad or cherry tomatoes.

  • Brush with extra warm BBQ sauce before serving for extra shine.

🔥 Pro Tips

  • For smoky flavor, finish ribs on a grill instead of broiling.

  • Let ribs rest 5–10 minutes before slicing.

  • Marinate ribs overnight for deeper flavor.
