Crispy Honey Feta Phyllo Rolls

Ingredients (Makes 6–8 rolls)

  • 8 sheets phyllo dough (thawed)

  • 200g (7 oz) feta cheese

  • 100g (3.5 oz) cream cheese (softened)

  • 1 tablespoon fresh parsley, finely chopped

  • ½ teaspoon black pepper

  • ½ teaspoon dried oregano (optional)

  • 4 tablespoons melted butter or olive oil (for brushing)

For Topping:

  • 3–4 tablespoons honey

  • 1 tablespoon sesame seeds (toasted)

  • ½ teaspoon chili flakes (optional)

  • Extra chopped parsley


Instructions

Step 1: Prepare the Filling

  1. In a bowl, mash feta and cream cheese together.

  2. Add parsley, black pepper, and oregano.

  3. Mix until creamy but slightly textured.


Step 2: Assemble the Rolls

  1. Preheat oven to 180°C (350°F).

  2. Lay one sheet of phyllo on a clean surface.

  3. Brush lightly with melted butter.

  4. Place another sheet on top and brush again.

  5. Add 2 tablespoons of filling near one edge.

  6. Fold sides inward and roll tightly like a spring roll.

  7. Repeat with remaining sheets.


Step 3: Bake

  1. Place rolls seam-side down on parchment paper.

  2. Brush tops with butter.

  3. Bake 20–25 minutes until golden brown and crispy.


Step 4: Finish

  1. Drizzle warm honey over the hot rolls.

  2. Sprinkle with sesame seeds, chili flakes, and fresh parsley.


Tips

  • Keep phyllo covered with a damp towel while working to prevent drying.

  • Serve warm for best texture.

  • Add crushed walnuts for extra crunch.
