3 cups seafood stock (or chicken stock)

1 can (14 oz / 400g) diced tomatoes

1 tablespoon tomato paste

½ teaspoon dried oregano

Salt and black pepper to taste
Garnish:

¼ cup fresh parsley (chopped)

Crusty bread (for serving)

1️⃣ Clean the Clams

Rinse clams under cold water.

Soak in salted water for 20 minutes to remove sand.

Discard any cracked or open clams that don’t close when tapped.
2️⃣ Build the Flavor Base

Heat olive oil in a large pot over medium heat.

Add onion and cook until soft (3–4 minutes).

Add garlic and red pepper flakes; sauté 30 seconds.

Stir in tomato paste and cook 1 minute.
3️⃣ Deglaze & Simmer

Pour in white wine; simmer 2–3 minutes.

Add diced tomatoes, seafood stock, oregano, salt, and pepper.

Simmer gently for 10–15 minutes.
4️⃣ Cook the Clams

Add clams to the pot.

Cover and cook 5–7 minutes until clams open.

Discard any clams that remain closed.
5️⃣ Finish & Serve

Taste and adjust seasoning.

Sprinkle generously with fresh parsley.

Drizzle a little olive oil on top.
