Spicy Garlic Stir-Fried Squid

Ingredients

Main

  • 500 g fresh squid, cleaned and cut into rings

  • 1 small onion, sliced

  • 3 cloves garlic, minced

  • 1 tsp ginger, minced

  • 2 tbsp vegetable oil

  • 2 tbsp green onions, chopped

Sauce

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp chili paste or chili sauce

  • 1 tsp brown sugar

  • 1 tsp sesame oil

  • ½ tsp black pepper

  • 1 tbsp rice vinegar

Optional:

  • ½ tsp chili flakes for extra heat


Instructions

1. Prepare the Squid

  1. Clean squid thoroughly.

  2. Slice into rings and tentacle pieces.

  3. Pat dry with paper towels.


2. Make the Sauce

In a small bowl mix:

  • soy sauce

  • oyster sauce

  • chili paste

  • brown sugar

  • sesame oil

  • rice vinegar

  • black pepper

Stir well.


3. Cook Aromatics

  1. Heat oil in a wok or large skillet over medium-high heat.

  2. Add garlic, ginger, and onion.

  3. Stir-fry 1–2 minutes until fragrant.


4. Cook the Squid

  1. Add squid rings and tentacles.

  2. Stir-fry quickly for 2–3 minutes.
    (Squid cooks fast; overcooking makes it tough.)


5. Add the Sauce

  1. Pour in the prepared sauce.

  2. Toss everything together for 1 minute until the squid is coated.


6. Finish

  • Sprinkle with green onions and optional chili flakes.


Result:
Tender savory squid with a slightly spicy garlic sauce — perfect served with steamed rice or noodles.
