Roasted Chicken with Crispy Feta and Herbs


A flavorful, juicy chicken dish with a crispy, cheesy topping — perfect for a cozy dinner!


❇️ Ingredients:

  • 1 whole chicken (about 1.5 kg) or 4 chicken thighs πŸ”

  • 3 tablespoons olive oil πŸ«’

  • 3 cloves garlic, finely chopped πŸ§„

  • Juice of 1 lemon πŸ‹

  • 1 teaspoon fresh thyme 🌿

  • 1 teaspoon fresh rosemary 🌿

  • 1 cup crumbled feta cheese πŸ§€

  • 1/4 cup breadcrumbs (optional, for extra texture)

  • 2 tablespoons fresh parsley, chopped 🌿


πŸ₯£ Instructions:

  1. Preheat the oven:
    Preheat your oven to 200°C (400°F).

  2. Prepare the chicken:
    Pat the chicken dry with paper towels. If using a whole chicken, you can cut it into pieces or roast it whole. Place the chicken in a baking dish.

  3. Make the marinade:
    In a small bowl, mix the olive oil, chopped garlic, lemon juice, thyme, rosemary, salt, and pepper.

  4. Marinate the chicken:
    Brush the marinade generously over the chicken, making sure it's well coated. Let it sit for at least 15–20 minutes to absorb the flavors (or marinate for a few hours in the fridge for deeper flavor).

  5. Prepare the topping:
    In another bowl, mix the crumbled feta cheese with the breadcrumbs (if using) and chopped parsley.

  6. Roast the chicken:
    Place the chicken in the preheated oven and roast for about 35–40 minutes for thighs, or 50–60 minutes for a whole chicken, depending on the size. Baste occasionally with the pan juices for extra juiciness.

  7. Add the feta topping:
    About 10 minutes before the chicken is fully cooked, sprinkle the feta mixture evenly over the top. Return to the oven and bake until the feta is golden and crispy.

  8. Serve:
    Remove the chicken from the oven, let it rest for a few minutes, and serve hot. Garnish with extra parsley if desired.

  • Serve with roasted vegetables, a fresh green salad, or warm pita bread for a complete meal.

  • If you prefer spicier flavors, add a pinch of crushed red pepper flakes to the marinade!

  • To check doneness, the internal temperature of the chicken should reach 75°C (165°F).
