Total Time
- 2 hours 20 minutes
Servings
- 1 large loaf or 12 rolls
Ingredients
- 500ml (2 cups) warm milk (about 110°F/43°C)
- 7g (1½ tsp) active dry yeast
- 100g (½ cup) brown sugar
- 60ml (¼ cup) oil (vegetable or neutral-flavored oil)
- 1 tbsp vinegar (white or apple cider vinegar)
- 1 tsp salt
- 2 eggs (plus 1 egg for egg wash, optional)
- 750g (6 cups) all-purpose flour (adjust as needed)
- 50g (¼ cup) unsalted butter, softened
Instructions
Step 1: Activate the Yeast
- In a large mixing bowl, combine the warm milk and brown sugar. Stir until the sugar dissolves.
- Sprinkle the yeast over the milk mixture and let it sit for 5–10 minutes , or until frothy. This indicates the yeast is active and ready to use.
Step 2: Make the Dough
- Add the oil, vinegar, salt, and eggs to the yeast mixture. Whisk until well combined.
- Gradually add the flour, 1 cup at a time, mixing with a wooden spoon or stand mixer fitted with a dough hook. Continue adding flour until the dough starts to pull away from the sides of the bowl but is still slightly sticky.
- Knead the dough on a floured surface (or with the dough hook) for 8–10 minutes , until smooth and elastic. If the dough feels too sticky, add a little more flour, 1 tablespoon at a time, but avoid over-flouring.
- Incorporate the softened butter into the dough by kneading it in small pieces until fully absorbed. The dough will become soft, silky, and slightly tacky.
Step 3: First Rise
- Place the dough in a lightly oiled bowl, turning it once to coat the surface with oil. Cover the bowl with a clean kitchen towel or plastic wrap.
- Let the dough rise in a warm, draft-free area for 1 hour , or until doubled in size.
Step 4: Shape the Brioche
- Punch down the risen dough to release air bubbles. Turn it out onto a lightly floured surface.
- For Rolls: Divide the dough into 12 equal portions. Shape each portion into a smooth ball and place them in a greased muffin tin or on a baking sheet lined with parchment paper.
For Loaf: Shape the dough into a log and place it in a greased loaf pan. - Cover the shaped dough with a kitchen towel and let it rise again for 30–45 minutes , or until puffy and nearly doubled in size.
Step 5: Preheat and Prepare
- Preheat your oven to 350°F (175°C) .
- (Optional) Beat 1 egg with 1 tablespoon of milk to make an egg wash. Brush the tops of the brioche gently for a golden, shiny finish.
Step 6: Bake the Brioche
- Bake the brioche for 25–30 minutes , or until golden brown and the internal temperature reaches 190°F (88°C) .
- For rolls: Check after 20 minutes.
- For loaf: Check after 25 minutes.
- Remove from the oven and let cool on a wire rack before slicing or serving.
Pro Tips
- Warm Milk Tip: Ensure the milk is warm (not hot) to activate the yeast without killing it.
- Butter Substitution: Use melted butter instead of softened butter, but make sure it’s cooled slightly before adding to the dough.
- Storage: Store brioche in an airtight container at room temperature for up to 2 days or freeze for longer storage. Reheat in the oven for freshness.
- Flavor Boost: Add a teaspoon of vanilla extract or citrus zest (like orange or lemon) to the dough for extra aroma.
