
Spicy Avocado & Egg Salad Bowl

Ingredients:
- 1 can chickpeas, drained
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tsp oregano
- Salt and pepper to taste
Instructions:
1. Combine chickpeas, cherry tomatoes, cucumber, and red onion in a large bowl.
2. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
3. Pour the dressing over the salad and toss to coat evenly.
4. Garnish with fresh parsley or mint leaves before serving.
