Beet, Spinach, and Lentil Salad with Balsamic Vinaigrette and Honey

A fresh and nutritious salad, perfect for a light and balanced meal.
Ingredients:
- 4 cooked beets, peeled and diced
- 2 cups fresh spinach
- 1 cup cooked and cooled lentils
- 1/4 cup chopped nuts
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. In a bowl, combine the beets, spinach, lentils, and nuts.
2. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper to make the vinaigrette.
3. Pour the vinaigrette over the salad and gently toss to coat.
4. Let the salad rest for 10 minutes before serving to allow the flavors to meld.
