Broccoli Feta Fritters

Ingredients

  • 4 small crowns broccoli (about 4–5 cups, chopped)

  • 3 eggs, lightly beaten

  • 5 tablespoons all-purpose flour

  • 1/3 cup shredded mozzarella

  • 3 oz feta cheese, crumbled

  • Salt and pepper to taste

  • Optional: 1–2 cloves garlic (minced), olive oil for frying


Instructions

  1. Prep the Broccoli
    Cut broccoli into florets and steam or boil for 3–4 minutes until just tender. Drain and finely chop or pulse in a food processor until crumbly but not mushy.

  2. Mix the Batter
    In a large bowl, combine the chopped broccoli, eggs, flour, mozzarella, and feta. Add salt, pepper, and optional garlic if using. Mix well until the mixture holds together.

  3. Form the Fritters
    Scoop about 2 tablespoons of the mixture and shape into small patties.

  4. Cook
    Heat a skillet over medium heat and add a bit of olive oil. Cook fritters for 2–3 minutes on each side or until golden brown and cooked through.

  5. Serve
    Serve hot with a side of Greek yogurt, sour cream, or a dipping sauce of your choice.
