Ingredients

Chocolate Sponge Base

  • 100g all-purpose flour

  • 25g cocoa powder

  • 1 tsp baking powder

  • 2 eggs

  • 80g sugar

  • 50ml milk

  • 40g melted butter

Chocolate Mousse

  • 200g dark chocolate

  • 300ml heavy cream

  • 1 tsp vanilla extract

  • 5g gelatin powder

Blackberry Compote Center

  • 1 cup blackberries

  • 2 tbsp sugar

  • 1 tbsp lemon juice

Mirror Glaze

  • 100g dark chocolate

  • 100ml heavy cream

  • 80g sugar

  • 50ml water

  • 5g gelatin powder

Decoration

  • Fresh blackberries

  • White chocolate shards

  • Mint leaves

  • Cocoa powder

  • Powdered sugar

Instructions

Step 1: Prepare the Blackberry Center

  1. Combine blackberries, sugar, and lemon juice in a saucepan.

  2. Simmer for 8โ€“10 minutes until thickened.

  3. Cool completely and freeze in small dome molds.

Step 2: Make the Chocolate Sponge

  1. Preheat oven to 175ยฐC (350ยฐF).

  2. Mix dry ingredients together.

  3. Whisk eggs and sugar until fluffy.

  4. Fold in milk and butter.

  5. Bake for 15โ€“18 minutes.

  6. Cut small circles to fit the dome molds.

Step 3: Prepare the Chocolate Mousse

  1. Bloom gelatin in cold water.

  2. Melt dark chocolate.

  3. Warm a small portion of cream and dissolve gelatin.

  4. Combine with melted chocolate.

  5. Fold in whipped cream until smooth.

Step 4: Assemble the Domes

  1. Fill silicone dome molds halfway with mousse.

  2. Insert frozen blackberry compote center.

  3. Cover with more mousse.

  4. Seal with sponge cake discs.

  5. Freeze for at least 4 hours.

Step 5: Make the Mirror Glaze

  1. Heat cream, sugar, and water.

  2. Add gelatin and stir.

  3. Pour over chopped chocolate.

  4. Blend until glossy.

  5. Cool glaze to approximately 32โ€“35ยฐC.

Step 6: Glaze and Decorate

  1. Remove frozen domes from molds.

  2. Pour mirror glaze evenly over each dome.

  3. Decorate with blackberries, white chocolate shards, cocoa powder, and mint.
