Ingredients
Chocolate Sponge Base

25g cocoa powder

1 tsp baking powder

2 eggs

80g sugar

50ml milk

40g melted butter
Chocolate Mousse
-
200g dark chocolate
-
300ml heavy cream
-
1 tsp vanilla extract
-
5g gelatin powder
Blackberry Compote Center
-
1 cup blackberries
-
2 tbsp sugar
-
1 tbsp lemon juice
Mirror Glaze
-
100g dark chocolate
-
100ml heavy cream
-
80g sugar
-
50ml water
-
5g gelatin powder
Decoration
-
Fresh blackberries
-
White chocolate shards
-
Mint leaves
-
Cocoa powder
-
Powdered sugar
Instructions
Step 1: Prepare the Blackberry Center

Combine blackberries, sugar, and lemon juice in a saucepan.

Simmer for 8โ10 minutes until thickened.

Cool completely and freeze in small dome molds.
Step 2: Make the Chocolate Sponge

Preheat oven to 175ยฐC (350ยฐF).

Mix dry ingredients together.

Whisk eggs and sugar until fluffy.

Fold in milk and butter.
-
Bake for 15โ18 minutes.

Cut small circles to fit the dome molds.
Step 3: Prepare the Chocolate Mousse

Bloom gelatin in cold water.

Melt dark chocolate.
-
Warm a small portion of cream and dissolve gelatin.

Combine with melted chocolate.
-
Fold in whipped cream until smooth.
Step 4: Assemble the Domes

Fill silicone dome molds halfway with mousse.

Insert frozen blackberry compote center.
-
Cover with more mousse.
-
Seal with sponge cake discs.
-
Freeze for at least 4 hours.
Step 5: Make the Mirror Glaze

Heat cream, sugar, and water.
-
Add gelatin and stir.
-
Pour over chopped chocolate.
-
Blend until glossy.
-
Cool glaze to approximately 32โ35ยฐC.
Step 6: Glaze and Decorate

Remove frozen domes from molds.
-
Pour mirror glaze evenly over each dome.
-
Decorate with blackberries, white chocolate shards, cocoa powder, and mint.
