Ingredients

For the Crust

  • 1Β½ cups graham cracker crumbs

  • 6 tbsp unsalted butter, melted

  • 2 tbsp sugar

For the Cheesecake Filling

  • 500g cream cheese, softened

  • ΒΎ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • Β½ cup sour cream

  • 1 tbsp lemon juice

For the Berry Topping

  • 1 cup raspberries

  • Β½ cup blueberries

  • Β½ cup blackberries

  • ΒΌ cup sugar

  • 2 tbsp water

  • 1 tsp cornstarch mixed with 1 tbsp water

Garnish

  • Fresh berries

  • Mint leaves

  • Powdered sugar

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 160Β°C (325Β°F).

  2. Combine graham cracker crumbs, sugar, and melted butter.

  3. Press firmly into a 9-inch springform pan.

  4. Bake for 8 minutes and cool.

Step 2: Make the Filling

  1. Beat cream cheese until smooth.

  2. Add sugar and mix well.

  3. Add eggs one at a time.

  4. Mix in vanilla, sour cream, and lemon juice.

Step 3: Bake

  1. Pour filling onto the crust.

  2. Bake for 45–50 minutes until the center is slightly set.

  3. Turn off oven and leave cheesecake inside for 1 hour.

  4. Chill for at least 4 hours or overnight.

Step 4: Prepare the Berry Sauce

  1. Combine berries, sugar, and water in a saucepan.

  2. Simmer for 5 minutes.

  3. Stir in cornstarch slurry.

  4. Cook until thickened.

  5. Let cool completely.

Step 5: Decorate

  1. Spoon berry sauce over chilled cheesecake.

  2. Top with fresh raspberries, blueberries, and blackberries.

  3. Dust lightly with powdered sugar.

  4. Garnish with mint leaves.
