Instructions:

Prepare the beetroot purée:
Place the cooked beetroot pieces in a blender or food processor. Blend until smooth, creating a rich, vibrant purée. If the mixture is too thick, you can add a teaspoon of water or olive oil to help blend. Taste and season with a little salt and pepper if desired. -
Make the goat cheese mixture:
In a mixing bowl, combine the fresh goat cheese, Greek yogurt, and honey. Use a fork or hand mixer to blend everything until the mixture is smooth and creamy. The yogurt adds a silky texture, while the honey brings a hint of sweetness to balance the flavors. -
Layer the verrines:
