Ingredients

Salad Base

  • 2 ripe avocados, diced

  • 1 cup black beans, rinsed and drained

  • 1 cup sweet corn kernels

  • 2 Roma tomatoes, diced

  • ¼ cup red bell pepper, diced

  • 2 tbsp red onion, finely chopped

  • 2 tbsp fresh cilantro, chopped

Cilantro-Lime Dressing

  • ¼ cup Greek yogurt or sour cream

  • 2 tbsp mayonnaise

  • Juice of 1 lime

  • 2 tbsp cilantro

  • 1 small garlic clove

  • Salt and black pepper to taste

Garnish

  • Mixed salad greens

  • Tortilla strips

  • Fresh cilantro leaves

Instructions

  1. Combine avocado, black beans, corn, tomatoes, bell pepper, onion, and cilantro in a large bowl.

  2. Blend yogurt, mayonnaise, lime juice, cilantro, garlic, salt, and pepper until smooth.

  3. Fold half of the dressing into the salad mixture.

  4. Using a food ring mold, press the salad mixture onto serving plates to form a neat stack.

  5. Carefully remove the mold.

  6. Drizzle the remaining dressing around and over the salad.

  7. Top with mixed greens, cilantro leaves, and crispy tortilla strips.

  8. Serve immediately.
