Ingredients

Chicken

  • 2 boneless, skinless chicken thighs or breasts

  • 1 tablespoon olive oil

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried oregano or thyme

  • Salt and black pepper, to taste

  • 1 tablespoon butter

Pasta

  • 200 g fettuccine or tagliatelle pasta

  • Salt (for boiling water)

Creamy Alfredo Sauce

  • 2 tablespoons butter

  • 2 cloves garlic, minced

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1/4 teaspoon black pepper

  • Salt, to taste

  • 1/4 teaspoon nutmeg (optional)

Garnish

  • Fresh parsley, finely chopped

Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
Drain and set aside, reserving a small amount of pasta water.

Step 2: Season and Cook the Chicken

Season the chicken on both sides with paprika, garlic powder, oregano, salt, and black pepper.

Heat olive oil in a skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side until golden brown and fully cooked.
Add butter to the pan during the last minute and baste the chicken for extra flavor.

Remove the chicken from the pan and let rest. Slice if desired.

Step 3: Make the Alfredo Sauce

In the same pan, lower heat to medium. Add butter and garlic, sauté for 30 seconds until fragrant.

Pour in the heavy cream and bring to a gentle simmer. Add Parmesan cheese, black pepper, salt, and nutmeg. Stir continuously until the sauce thickens.

If the sauce is too thick, add a splash of reserved pasta water.

Step 4: Combine Pasta and Sauce

Add the cooked pasta to the sauce and toss until evenly coated.

Step 5: Serve

Plate the creamy pasta and top with pan-seared chicken. Sprinkle with fresh parsley and extra Parmesan if desired.

Serve hot.
