Crispy Spiced Roasted Potatoes

Ingredients

  • 500 g baby potatoes or small potatoes, sliced into thick rounds

  • 3 tablespoons olive oil

  • 1 teaspoon paprika (smoked or sweet)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon chili powder or cayenne (optional)

  • Salt and black pepper, to taste

  • 1 teaspoon dried oregano or thyme

  • Fresh parsley, finely chopped (for garnish)

Step 1: Prepare the Potatoes

Preheat the oven to 200°C (400°F).
Wash and scrub the potatoes clean. Slice them into even rounds, about 1–1.5 cm thick, to ensure even cooking.

Step 2: Season

Place the potatoes in a large bowl.
Add olive oil, paprika, garlic powder, onion powder, chili powder, dried herbs, salt, and black pepper.
Toss well until all potato slices are evenly coated.

Step 3: Roast

Arrange the potatoes in a single layer on a baking tray lined with parchment paper.
Roast for 20 minutes, then flip the potatoes and roast for another 15–20 minutes until golden brown, crispy on the outside, and tender inside.

Step 4: Finish

Remove from the oven and sprinkle with freshly chopped parsley.
Serve immediately while hot and crispy.

  • Serve as a side dish with grilled meat, chicken, or fish

  • Pair with sour cream, garlic yogurt sauce, or spicy mayo

  • Great as a snack or appetizer


Tips

  • Do not overcrowd the tray for maximum crispiness

  • For extra crunch, roast on the top rack during the last 5 minutes

  • Can also be made in an air fryer at 190°C (375°F) for 18–22 minutes
