Avocado Toast with Roasted Cherry Tomatoes, Olives, and Feta


Ingredients (Serves 2)

  • 2 thick slices whole-grain or sourdough bread

  • 1 ripe avocado

  • 1 cup cherry tomatoes (mixed red & yellow if possible)

  • ¼ cup Kalamata olives, pitted

  • ¼ cup crumbled feta cheese

  • 2 tbsp olive oil (plus extra for drizzling)

  • 1 tsp balsamic glaze or balsamic vinegar

  • 1 small clove garlic (optional)

  • Salt, to taste

  • Black pepper, to taste

  • ½ tsp dried oregano or fresh thyme leaves

  • Optional toppings: chopped nuts (walnuts/pecans), chili flakes, pumpkin seeds


Instructions

  1. Roast the Tomatoes
    Preheat oven to 200°C (400°F).
    Toss cherry tomatoes with 1 tablespoon olive oil, salt, pepper, and oregano.
    Roast for 12–15 minutes until soft, slightly blistered, and juicy. Set aside.

  2. Prepare the Avocado Spread
    Mash the avocado in a bowl with a pinch of salt and pepper.
    For extra flavor, lightly rub the bowl with the cut garlic clove or mix in a few drops of olive oil.

  3. Toast the Bread
    Toast the bread slices until deeply golden and crisp on the outside but still tender inside.

  4. Assemble the Toast
    Spread mashed avocado generously over each toast.
    Top with roasted tomatoes and olives.

  5. Finish and Garnish
    Sprinkle crumbled feta evenly over the top.
    Drizzle with olive oil and balsamic glaze.
    Add herbs, nuts, or seeds if desired. Finish with black pepper.

  • Serve immediately while the toast is crisp and the tomatoes are warm.
