Avocado Toast with Roasted Cherry Tomatoes, Olives, and Feta
Ingredients (Serves 2)

2 thick slices whole-grain or sourdough bread
-
1 ripe avocado
-
1 cup cherry tomatoes (mixed red & yellow if possible)
-
¼ cup Kalamata olives, pitted
-
¼ cup crumbled feta cheese
-
2 tbsp olive oil (plus extra for drizzling)
-
1 tsp balsamic glaze or balsamic vinegar
-
1 small clove garlic (optional)
-
Salt, to taste
-
Black pepper, to taste
-
½ tsp dried oregano or fresh thyme leaves
-
Optional toppings: chopped nuts (walnuts/pecans), chili flakes, pumpkin seeds
Instructions

Roast the Tomatoes
Preheat oven to 200°C (400°F).
Toss cherry tomatoes with 1 tablespoon olive oil, salt, pepper, and oregano.
Roast for 12–15 minutes until soft, slightly blistered, and juicy. Set aside. -
Prepare the Avocado Spread
Mash the avocado in a bowl with a pinch of salt and pepper.
For extra flavor, lightly rub the bowl with the cut garlic clove or mix in a few drops of olive oil. -
Toast the Bread
Toast the bread slices until deeply golden and crisp on the outside but still tender inside. -
Assemble the Toast
Spread mashed avocado generously over each toast.
Top with roasted tomatoes and olives. -
Finish and Garnish
Sprinkle crumbled feta evenly over the top.
Drizzle with olive oil and balsamic glaze.
Add herbs, nuts, or seeds if desired. Finish with black pepper.
Serving Notes
