Grilled Chicken with Pineapple Salsa

Ingredients

For the Grilled Chicken

  • 2 large chicken breasts, sliced lengthwise

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • 1/2 teaspoon dried oregano or thyme

  • 1 tablespoon lime or lemon juice

For the Pineapple Salsa

  • 1 1/2 cups fresh pineapple, diced

  • 1/4 cup red onion, finely chopped

  • 1 tablespoon olive oil

  • 1 tablespoon fresh lime juice

  • Salt, to taste

  • Black pepper, to taste

  • Fresh parsley or cilantro, finely chopped


Instructions

Step 1: Marinate the Chicken

In a bowl, combine olive oil, paprika, garlic powder, salt, pepper, herbs, and lime juice.
Coat the chicken evenly and let it marinate for at least 10 minutes.

Step 2: Grill the Chicken

Heat a grill pan or skillet over medium-high heat.
Cook the chicken for 5–6 minutes per side until golden brown with grill marks and fully cooked through.
Remove from heat and let rest for a few minutes.

Step 3: Prepare the Pineapple Salsa

In a separate bowl, mix pineapple, red onion, olive oil, lime juice, salt, and pepper.
Add chopped parsley or cilantro and gently toss.

Step 4: Assemble and Serve

Arrange grilled chicken on a plate and spoon the pineapple salsa on the side or over the chicken.
Serve warm.
