Seafood Bisque with Crab, Shrimp, and Lobster

This rich and creamy seafood bisque combines the delicate flavors of crab, shrimp, and lobster into a luxurious soup that is perfect for special

occasions or an elevated home meal.

Ingredients

  • 1/2 lb cooked crab meat

  • 1/2 lb shrimp, peeled and deveined

  • 1/2 lb cooked lobster meat, chopped

  • 4 tablespoons butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup all-purpose flour

  • 4 cups seafood broth or chicken broth

  • 1 cup heavy cream

  • 1 cup whole milk

  • 1/4 cup white wine (optional)

  • 1/2 teaspoon smoked paprika

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the base
    In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté for 3–4 minutes until soft and translucent. Stir in the garlic and cook for another 30 seconds until fragrant.

  2. Make the roux
    Sprinkle the flour over the onion mixture. Stir continuously for 1–2 minutes to form a smooth roux. This step helps thicken the bisque and removes the raw flour taste.

  3. Deglaze and add broth
    Slowly pour in the white wine (if using), stirring constantly to prevent lumps. Let it simmer for 1 minute. Gradually add the broth while whisking until the mixture is smooth.

  4. Add dairy and seasonings
    Stir in the heavy cream, milk, smoked paprika, salt, and pepper. Reduce the heat to low and let the bisque simmer gently for 10–12 minutes, stirring occasionally. Do not allow it to boil.

  5. Cook the seafood
    Add the shrimp to the pot and cook for 2–3 minutes until they turn pink and opaque. Then gently fold in the crab and lobster meat. Simmer for another 3–5 minutes until everything is heated through.

  6. Adjust seasoning
    Taste the bisque and adjust salt and pepper as needed. If the soup is too thick, add a little more broth or milk to reach your desired consistency.

  7. Serve
    Ladle the bisque into bowls and garnish with fresh parsley. Serve hot with crusty bread or garlic toast.

  • Pair with a light green salad or toasted baguette for a balanced meal.

  • For extra depth, a small splash of sherry can be added just before serving.

  • Best enjoyed fresh, but leftovers can be refrigerated for up to 2 days.
