
Homemade Mexican Pizza
A crispy, cheesy, and flavor-packed twist on a classic!
Ingredients:
• 1 lb lean ground beef
• 1 packet (1 oz) taco seasoning
• ½ cup water
• 6 medium flour tortillas
• 1 can (16 oz) refried beans
• 1 can (10 oz) red enchilada sauce
• 1 cup shredded cheddar cheese
• 1 cup shredded pepper-jack cheese
• 1 Roma tomato, diced
• 1 green onion, diced
• 1 small can sliced black olives
Instructions:
1. Preheat oven to 375°F. Lightly spray two baking sheets with non-stick spray and place three tortillas on each.
2. Crisp the tortillas: Bake for 3-5 minutes, flip, and bake another 2-5 minutes until golden and crispy. Set aside.
3. Cook the beef: In a skillet over medium-high heat, cook and crumble the ground beef. Drain excess grease.
4. Season the meat: Stir in taco seasoning and water. Bring to a boil, then reduce to medium-low and let simmer for 10 minutes. Set aside.
5. Warm the beans: Heat the refried beans in a microwave-safe bowl for easy spreading.
6. Assemble:
• Spread a thin layer of refried beans on one tortilla.
• Add β
of the seasoned beef mixture.
• Place another tortilla on top.
• Spread 3 tablespoons of enchilada sauce over the top tortilla.
• Sprinkle with cheddar and pepper-jack cheese.
• Add diced tomato, green onion, and black olives.
7. Repeat with the remaining tortillas to make three pizzas.
8. Bake for 5 minutes, or until the cheese is melted and bubbly.
9. Slice & Serve! Let cool slightly before cutting and enjoy this delicious homemade Mexican pizza! Pro Tip: Add a dollop of sour cream or guacamole for extra flavor!
