Green Tomato Jam (Mermelada de Tomate Verde)

A unique and delicious twist on traditional jams! Green Tomato Jam combines the tart freshness of unripe tomatoes with citrus and warm cinnamon to create a sweet and tangy preserve. Perfect for spreading on toast, pairing with cheeses, or using as a glaze for savory dishes.

  • 1 kg (2.2 lbs) green tomatoes

  • 500 g (about 2 ½ cups) granulated sugar

  • 1 stick of cinnamon

  • 1 teaspoon of lemon zest

  • Juice of 1 lemon

  1. Prepare the Tomatoes
    Wash the green tomatoes thoroughly under running water.
    Remove any stems and chop them into small pieces, including the skins.

  2. Combine Ingredients
    In a large pot or saucepan, combine the chopped tomatoes with the sugar, cinnamon stick, lemon zest, and lemon juice.
    Mix well to coat all the tomato pieces evenly.
    Let the mixture rest for 1 hour at room temperature. This helps the sugar draw out moisture from the tomatoes and intensifies the flavor.

  3. Cook the Jam
    After resting, place the pot over medium heat.
    Cook the mixture, stirring occasionally, for about 40 minutes or until the tomatoes break down and the mixture thickens into a jam-like consistency.
    Keep an eye on it and stir regularly to prevent sticking or burning.

  4. Finish and Store
    Once the jam has thickened and the tomatoes are soft and translucent, remove the cinnamon stick.
    While still hot, pour the jam into sterilized glass jars, leaving a small gap at the top.
    Seal the jars tightly.

    • You can store the jam in the refrigerator for up to a few weeks,

    • or process the jars in a boiling water bath (water bath canning) for longer shelf life at room temperature.
