Ingredients (Serves 2–3 | Makes 6 toasts)

Toast Base

  • 6 slices baguette or crusty bread

  • 1–2 tablespoons olive oil or butter (for toasting)

Ricotta Layer

  • 1 cup ricotta cheese (full-fat recommended)

  • 1–2 tablespoons honey (optional)

  • Pinch of salt

Blueberry Topping

  • 1½ cups fresh blueberries

  • 1–2 tablespoons honey or maple syrup

  • 1 teaspoon lemon juice

  • ½ teaspoon vanilla extract (optional)

Garnish

  • Fresh thyme or mint leaves

  • Optional: cracked black pepper or lemon zest


Instructions

Step 1: Toast the bread

  1. Brush bread slices lightly with olive oil or butter.

  2. Toast in a pan, oven, or toaster until golden and crisp.

  3. Set aside to cool slightly.


Step 2: Prepare the ricotta

  1. In a bowl, mix ricotta with a pinch of salt and honey (if using).

  2. Stir until smooth and creamy.

  3. Set aside.


Step 3: Cook the blueberries

  1. In a small saucepan over medium heat, add blueberries, honey (or maple syrup), and lemon juice.

  2. Cook for 3–5 minutes, stirring gently, until the berries soften and release juices but still hold their shape.

  3. Remove from heat and let cool slightly.


Step 4: Assemble the toast

  1. Spread a generous layer of ricotta onto each toast.

  2. Spoon warm blueberries and their juices over the ricotta.

  3. Garnish with fresh herbs and optional lemon zest or cracked black pepper.


Serve

  • Serve immediately while the toast is crisp.

  • Enjoy warm or at room temperature.
