Ingredients

  • 2 slices whole-grain or sourdough bread, toasted

  • 1 ripe avocado

  • 1 tablespoon lemon juice

  • Salt and black pepper, to taste

  • ¼ cup cherry tomatoes, halved

  • 2 tablespoons feta cheese, crumbled

  • 2 tablespoons dried cranberries

  • 2 tablespoons walnuts, roughly chopped and lightly toasted

  • 1 teaspoon olive oil (optional)

Instructions

1.  Prepare the Avocado

Scoop the avocado into a bowl and mash lightly with lemon juice, salt, and black pepper until creamy but still slightly chunky.

2.  Toast the Bread

Toast the bread slices until golden and crisp.

3.  Assemble the Toast

Spread the mashed avocado evenly over each slice of toast.

4.  Add the Toppings

Top with cherry tomatoes, crumbled feta cheese, dried cranberries, and toasted walnuts.

5.  Finish and Serve

Drizzle lightly with olive oil if desired. Serve immediately.
