
Banana Blueberry Breakfast Cookies
Soft, chewy, and naturally sweetened, these Banana Blueberry Breakfast Cookies are a wholesome and nutritious way to start your day. Packed with oats, fresh blueberries, and ripe bananas, they make for a perfect grab-and-go breakfast or healthy snack.
Ingredients:
2 ripe bananas, mashed
1 cup rolled oats
1/2 cup blueberries
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
A pinch of salt
Directions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mix together the mashed bananas, rolled oats, blueberries, honey or maple syrup, vanilla extract, cinnamon, and salt until well combined.
Drop spoonfuls of the mixture onto the prepared baking sheet, flattening slightly to form cookie shapes.
Bake for 15–18 minutes, or until the edges turn golden brown.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Enjoy fresh, or store in an airtight container for up to a week.
