Ingredients

⅓ cup honey

1 teaspoon vanilla extract

For the Apricot Honey Topping

6 fresh apricots, halved and pitted

3 tablespoons honey

1 tablespoon lemon juice

2 tablespoons water
Garnish

Sliced fresh apricots

Toasted sliced almonds

Fresh mint leaves
Instructions
Step 1: Bloom the Gelatin

Pour the cold water into a small bowl.

Sprinkle gelatin evenly over the surface.

Let stand for 5 minutes until softened.
Step 2: Make the Panna Cotta

In a saucepan, combine cream, milk, and honey.

Heat over medium-low heat until steaming but not boiling.

Remove from heat.
