Cake Base

  • 100 g white chocolate

  • 80 g butter

  • 2 eggs

  • 1/4 cup (50 g) sugar

  • 1/3 cup (40 g) flour

  • 1 teaspoon vanilla extract


Filling

  • 1/2 cup raspberry puree

  • 2 tablespoons sugar

  • 1 teaspoon lemon juice


Coating (Optional Fancy Layer)

  • Melted white chocolate (for outer shell)

  • Powdered sugar (for garnish)

  • Fresh raspberries + mint

Step 1: Make Raspberry Center

  • Cook raspberry puree + sugar + lemon juice

  • Simmer until thick (jam-like)

Cool → freeze small portions (important for lava effect)


Step 2: Make Batter

  • Melt white chocolate + butter

Whisk eggs + sugar until light
Combine with chocolate mixture

Fold in flour + vanilla


Step 3: Assemble

  • Grease molds

  • Add batter halfway

  • Insert frozen raspberry center

  • Cover with more batter


Step 4: Bake

  • Preheat oven to 180°C (356°F)

  • Bake 10–12 minutes

Edges set, center still soft


Step 5: Finish

  • Optional: dip in melted white chocolate for shell effect

  • Dust powdered sugar

  • Garnish with raspberries + mint
