For the Mandarin Orange Layer

1 cup (240 ml) fresh mandarin orange juice (strained)

2 tablespoons sugar (adjust to taste)

1 1/2 teaspoons gelatin powder

2 tablespoons cold water
For Garnish

Fresh mandarin segments

Powdered sugar (optional)

Mint or rosemary sprigs

Step 1: Bloom the Gelatin

Sprinkle gelatin over cold water (for both layers separately)

Let sit for 5 minutes until it blooms
Step 2: Make the Panna Cotta

Heat cream, milk, and sugar until warm (do not boil)

Add bloomed gelatin and stir until dissolved

Add vanilla extract
Pour into serving glasses (about halfway).
Refrigerate for 2–3 hours until set.
Step 3: Prepare the Mandarin Layer

Heat mandarin juice and sugar gently

Add bloomed gelatin and stir until dissolved

Let cool to room temperature
Step 4: Add the Citrus Layer

Once panna cotta is fully set, pour the mandarin mixture on top

Chill again for 2 hours until fully set
